Our family is probably like many these days in that we’re trying to make better choices on the foods we eat. As my girls are getting older and starting to pack their own school lunches, I want them to be equipped to make wise food choices. And when we travel, I’m always looking to pack some great vacation snacks so we can save money on vacation and avoid buying junk food.

One of my new favorite snacks to make is roasted chickpeas. Have you tried these yet? They’re surprisingly very easy to make, and can be seasoned in so many different ways. You can even make a batch and let each family member create their own special seasoning for their personal batch.

Chickpeas, also known as Garbanzo Beans, qualify as a vegetable and a protein source. They’re also packed full of vitamins and fiber. All awesome things for everyday snacking and to pack along for vacation snacks.

And again, they’re super easy to make. I like to do my batches with two cans of S&W Garbanzo Beans. For the S&W garbanzo beans you can get cans of regular, 50% less sodium, or organic garbanzo beans. We buy a lot of S&W Beans because I know they have high standards and have been delivering premium quality for over 120 years.

Roasted Chickpeas Recipe

great road trip snack idea!

  • 2 cans S&W Garbanzo Beans
  • olive oil
  • kosher / coarse salt

Preheat your oven to 400 degrees (F).

Drain and rinse your 2 cans of garbanzo beans. Then place them on a towel to dry. I like to use kitchen flour sack towels that are lint-free. I also pat dry the beans, you want them to start looking matte.

Toss the air-dried beans with a little olive oil and sprinkle with coarse salt. Be generous with the oil, but you don’t want them swimming. I’d guess I use about 2-3 tablespoons. My best advice for getting the best roasted chickpeas is to not skimp on the olive oil, and don’t add seasonings before baking.

Spread the chickpeas onto a baking pan in a single layer and place in the center of your oven. Bake them for about 30 minutes, stirring them every 10 minutes. You’ll notice they’re done when they get a nice golden color.

Now it’s time to add your seasoning! For this batch I decided to make greek/mediterranean roasted chickpeas.

Greek / Mediterranean Roasted Chickpea Seasoning Recipe

  • 1 t. dried oregano
  • 1 t. salt
  • 1 t. onion powder
  • 1 t. garlic powder
  • 1/2 t. cornstarch
  • 1/2 t. parsley
  • 1/2 t. paprika
  • 1/4 t. thyme
  • 1/4 t. cinnamon
  • 1/4 t. nutmeg
  • 1/4 t. black pepper

Sprinkle your seasoning over the roasted chickpeas / garbanzo beans, and you’re ready to eat. These are great snacks to pack in lunches or sprinkle on salads. Plus, put them in a travel container for packing on your next road trip or plane ride!
