A couple of years ago I discovered a really quick and easy way to make a delicious chicken quesadilla, and my family loves them! They work well for packing in a school lunch, so I wanted to share this recipe along with some other great school lunch ideas from Foodie.com.

Let’s look at my favorite ingredients to use for this chicken quesadilla recipe.

  • Tortillas – my favorite are Mission Artisan Multigrain
  • Chicken – quick and easy so I use canned chicken breast from Costco
  • Salsa – mix a few tablespoons of salsa in with the chicken, I like black bean & corn salsa
  • Cheese – whichever mexican blend shredded cheese is on sale

Place a tortilla in your skillet.

Add a small amount of shredded cheese around the tortilla.

Sprinkle the chicken and salsa mixture on top of the cheese.

Add another amount of cheese around the tortilla.

Place another tortilla on top.

Cook the quesadilla over medium high heat, flipping once you notice the cheese melting so it helps “stick” the two sides together. Try and flip fast and you’ll avoid loosing all your good filling into the skillet. The quesadilla tortillas should get some dark spots and crispy.

Before cutting, let the quesadilla set for a couple of minutes to help the cheese firm up.

  • 2 tortillas

Instructions

  4. Add another amount of cheese around the tortilla.
  5. Place another tortilla on top.

    1. Hi Tati – I’ve always wrapped them in foil and packed them in the lunchbox. We’ve never had issues, but you should decide what’s best for your family’s safety. :)
