4 Bean Soup Recipe – My Go To Busy Weeknight Easy Crockpot Meal

I just got back home from a massive California work trip and have yet to go to the store. With soccer practice twice a week and daily cross country practice pickup dinner planning can be a bit tough. I have one go-to easy meal that I love for busy nights, especially during fall and winter. My 4 bean soup recipe is the perfect answer for busy nights when you need to grab something from the cupboard and throw it in the crockpot.

Outside of the fact that this recipe is great for those busy weeknights, it’s also a great recipe for vacations! Whether you’re returning from home and don’t have a lot of energy to cook, or if you’re needing a great recipe for your vacation rental home, this recipe is easy and delicious.

4 Bean Soup Crockpot Recipe

Ingredients

  • smoked sausage
  • black beans – can (drained)
  • white beans – can (drained)
  • kidney beans – can (drained)
  • chili beans – can (not drained)
  • jar of salsa

Directions

  • Cut up the smoked sausage. I like to cut it longways in half, then coin the two halves together. You’ll be creating half circle coins.
  • Optional: I often throw the sausage into a pan and cook it a bit over med-high heat on the stove. I think this helps the fats melt down and can create a bit of a “sear” on the sides of the sausage pieces.
  • Add sausage to crockpot.
  • Add four cans of beans to the crockpot. I like to use S&W beans, they look great and taste great in this soup. Plus, having some canned beans in the cupboard is one of my go to busy life hacks! I also love that S&W offers a variety of beans. I use the lower sodium and organic bean options often.
  • Add the jar of salsa to the crockpot. I then rinse the jar with about 1/2 cup to 1 cup of water and pour that into the crockpot too. This helps the soup not be too thick, and you get all the salsa out of the jar.
  • Cook on high for 2-3 hours. Serve with some shredded cheese if you want, and we always pair ours with a cornbread muffin. Serves a family of four comfortably with leftovers.

This meal is honestly so quick to put together. It takes me about 15 minutes to get everything going in the crockpot. My favorite thing about this recipe is it’s great for leftovers for lunch!
